Back To School: Sweet Tooth & Wake Up Remedy

I understand that what I’m introducing is more commonly known as a Cafe Mocha. Except mine is made from home and specifically to the taste of who makes it. And it still works for me every time.

In the mornings every once and awhile I want and/or need that extra kick. Some days that means using the truck to drive myself to school and picking up a french vanilla from Tim Hortons (aka Timmys). Now that’s nice and all, but the cost certainly would add up.

I however happen to have several things in my household that make creating my own cafe mocha a pleasant and minutes long experience.
A nice Keurig machine. I could make the coffee from scratch. But I can click a button to have water boiled, put a little coffee pack in then voila I have half of my drink done. Soooo, I’m lazy, pretty obvious which I’ll go for. giphy1

So the next step involves an entire box of those coffee packets sitting in my mom’s closet. Sneak one of those out in the morning and place it in. As said before, half my drink is done. The next part involves one giant tub of instant hot chocolate mix. Giant tub because having it in bulk is a wonderful convenience I take for advantage. The steps are fairly simple as follows.

Place a kettle on high until the water boils. Using Keurig or other method, make coffee and place in cup. I use a mug meant for said hot beverage and put at least 2, maybe 3 spoonfuls on hot chocolate mix in the mug then in the sink (for spilling protection), pour the coffee made beforehand into the mug. Because it’s long I use a big spoon to stir it up and taste test. I’m very much a sweets person, not bitter, which causes the greatest conflict between coffee and myself. This means I almost always add in an extra spoon of hot chocolate stuffs. Then using water as mentioned, add in extra water as needed.

Remember to taste test.
The amount of hot chocolate used depends wholly on your sweet tooth. I have a bad one so my drink usually ends up more sweet and tasting more like the hot chocolate. To hide the bitter, but give me the extra kick to get going in the morning.

Energy Bites – No Bake

Except she and I are in charge of the most important part; the food. I baked a bunch today, cut up a lot of fruit and yum yum I tried out this new recipe. It was really similar to my granola bars. There were a few differences, changes could be made if you wanted to, but they ended really good so I thought I’d add them on here.

Oreo Truffles Recipe

oreo_truffles3Oreo. Truffles. I am being 110% serious these are some of the most delicious things I have ever made. I’ve also never had a truffle…I don’t know why, maybe I’ll try a store one. I’ll probably still like these better. The best part? The ingredient list is so incredibly short and simple. It’s so simple and any mess is a fun clean up because it’s delicious. A win win, so let’s start. These things are worth a rant and a tummy growl and spontaneous combustion, if you’re in the mood for that.

Funnel Cake Recipe

Every time I get the chance because of some event where I live, like most recently ribfest, and there is funnel cake, you bet I will eat some. I love it so much and it brings me joy, what can I say. It’s even better when you can make it yourself and have it whenever you want. So, look! A beautiful recipe to make it with! ^_^

Wacky Cake Recipe

This is an incredibly simple recipe that is both egg, nut and milk free, it can be made chocolate or vanilla in a simple switch of ingredients. Delicious moist and great for birthdays with some added icing. As a bonus, every icing with it is yummy. So let’s get the talk over with move on to the good part.

Our Take On A Mug Cake

11694073_800230553423660_323302335_nSo, here’s a quick sum up of how this post came to be, Emily and I (Shayla) were at my house after hockey and I wanted to make white chocolate brownies, didn’t have all the ingredients so we looked for something else to make. On facebook I found a video of an awesome recipe and immediately we did the whole, look at each other excitedly thing and got to work. Before you know it we were making mug cakes. Lots of fun with absolutely delicious results. Here it is:

Ingredients:

  • 2 tbsp butter (melted)
  • 1 large egg
  • 2 tbsp of milk
  • 1 tsp pure vanilla extract
  • 1/4 cup granulated sugar
  • 6 tbsp self-rising flour (we used normal flour it worked just fine)
  • a pinch of salt
  • sprinkles (of any kind)
  • microwave

Now here’s how it went:

  • Add the first two ingredients together and mix.

  • Then add in the milk, vanilla extract and sugar, mix well again.

  • Add in the flour and salt (we switched to using forks for stirring at this point)

  • Mix until smooth.

  • Once all the bumps are out you’re free to add in your sprinkles and mix in, no exact amount just however much you want. “I know I know, we only had Christmas sprinkles”

  • Then put in the microwave. Our video said 1 minute but it ended up being at least 2 mins give or take, simply put it in until once you put a toothpick in and it comes back out clean.

  • Once it cools down, add on top the icing, you can use a bag to make it look more artsy, we just wanted to eat it though.

Notes From Shayla: I happen to be allergic to eggs so in my recipe I used egg replacer instead of an egg like Emily did. In the end result it, mine rose less than Emily’s did and was comparably less dense as well. Mine was nicely filling, with just the right amount of richness I enjoy. I also didn’t put sprinkles on top of my icing, I didn’t feel like it. It ended up being really delicious and we put the icing on a bit earlier due to impatience, but that meant it was nice and warm and the icing could melt slightly. This is a recipe I’d noticed before in another video that was done by popsugar instead of buzzfeed, same recipe but with some different details at the end. Notes From Emily:  This was fun and easy recipe to make, and the cake tasted amazing! The cake itself ended up being really filling because it was so rich and dense. I also added the icing before it was completely cooled for the same reasons as Shayla, but in the end, the slightly melted icing only enhanced the flavour. I didn’t finish my cake, so Shayla sent me home with the leftovers. By the time I got home, it had become much denser, thus the textured took away from the flavour. I didn’t think about reheating it in the microwave, but when I talked to Shayla about it, she suggested that reheating it  would probably help make it less dense… Good luck and hope you enjoy this recipe as much as we did!

Spinach and Cheese Muffins

So I’m over at my friends house, we randomly decide to make cake and then I’m looking through one of her recipe books for fun. I find this recipe and I kind of go, oh hey breakfast, bit healthier, maybe I’ll try that out. It’s currently in the oven at this moment and I am half-assed sure I reallllly messed up. It was really doughy, unusual in muffins for me. And I had trouble mixing it too, too much flour, not enough milk. Really concerned. Maybe it’ll be okay. But I have about 35 minutes of wait until I know if my attempt at healthy baking was a total failure. I shall continue after that.

14 minutes left to go. Look pretty decent actually. Smell a little too spinachy. Not enough cheese?

Blueberry Bread Recipe

Blueberry Bread Recipe
This recipe turned out quite nicely for me after I admittedly randomly searched it up on the internet because I was craving blueberry bread. At first it was a different bread recipe I have, but I was lazy and that one is a bit more work. That one may get posted eventually though too because it is delicious. But this one is all the same.
